I said I would show you the difference of tastes by water temperature. I show you it by color in this post.
I made two cups. Same tea leaves, same amount of leaves and water, same soaking time, but different temperature.
1st one is at higher temperature.
1 tea spoon of leaves.

At 89’C.

And 2nd one is lower temperature.
1 tea spoon of leaves.

At 74’C.

Then see the difference in the next picture.

Right one is at 74’C. Left one is at 89’C. Dark one tastes bitter. Lighter one tastes sweeter.
Do you see this? Even same tea leaves, same amount of leaves and water and same soaking time, you can change the taste of green tea. Remember that water temperature is one key factor of the taste.

I’m sometimes asked about green tea when I’m tweeting. One of the popular questions are about water temperature. You probably already know. Water temperature is important factor to set the taste of green tea. As the temperature goes up, the green tea tastes bitter. Since catechine tend to diffuse water in higher temperature. But how can we control water temperature for making green tea? I explain my super-easy adjustment method. I actually did experiment as you see the next picture. Boiled water and 2 cups.

When you boil water, the temperature reaches to 90~100’C (190~210’F).

Then pour the hot water to 1st cup. The temperature drops 10’C (18’F). Now it’s 81’C (178’F)

Pour the hot water in the 1st cup to the 2nd cup. The temperature drops 8’C (15’F). Now it’s 73’C (163’F). It’s good temperature to make sweet green tea.

Did you get the change of water temperature?
Water temperature drops 8~10’C (15~18’F) when you transfer the water to one cup another. This is the simplest method to control the temperature without a thermometer.
You can use the boiling water if you like bitter and strong taste. But it’s good to know how to change the taste of green tea. The bitter taste green tea contains a lot of caffeine. It does not suit for the beverage before going to bed.
In my case, I make green tea with nearly boiling water in morning since I need to wake up. And I make green tea with water cooled down by using this method at night since I don’t want a lot of caffeine.
I will show you how the temperature affects the taste next time. Well, I cannot bring a cup of green tea to you. I explain the difference by color.

I went to a seminar about green tea in a tea store. The instructor told us the history of green tea in Japan and how to make green tea. And he also told us that green tea was not popular as black tea.
I think one reason why green tea is less popular than black tea are tea instrument. I make green tea with the traditional instrument, called Kyusu. Kyusu is a small tea pot with filter. Like these.

A metal or ceramic filter is equipped with it inside the mouth. The green tea liquid and the tea leaves are separated when the liquid is poured to cups. It’s the standard way for me.
However, it is hard to get the tea instrument in areas except some Asian countries. When I was in US, I bought a tea instrument with plastic filter. But it was really hard to use. The tea leaves which absorbed water were stuck in the holes of the filter.
So I was wondering how tea drinkers who didn’t have good instruments make green tea. One of my followers told me a good solution for this. Her tweet is following.
I make my iced green tea like this - put loose green tea in small pan with filtered water & bring to boil. The water should not be at a rolling boil - it should be just at the start of a gentle boil. Take off heat & let sit for a while. Strain into a large plastic bottle and add more filtered water and sweetener to taste, if desired. Chill in refrigerator. Pour over ice and enjoy. This is the best drink on a hot, Texas summer day. Refreshing!
This is an excellent method ! It should work fine if you use gas stove. It might be a little bit tricky if you use electric stove.

Do you like ice-cream? I looove ice-cream. My hands unconsciously reach to ice-cream when those can. It’s sometimes unavoidable. You know what I mean.
But be careful for what you drink when you eat ice-cream. The combination of ice-cream and black tea may produce kidney stone in your body.The calcium in ice-cream and oxalate in black tea make ionic bond. If the compound accumulates, it grows to kidney stone.
According to the article below, black tea in tea bags and loose tea leaves contain 4.68 and 5.11 milligrams of oxalate per gram of tea. Green teas and oolong tea had lower oxalate amounts, ranging from .23 to 1.15 milligrams per gram of tea.

I cannot find the number of oxalate content in coffee. But it seems to contain certain amount of oxlate.

Do you love to laugh, talk to friends and eat spicy food? When you have a sore in your mouth, any of those is hard to do.
I sometimes get a canker sore. It’s like a tiny monster in my mouth. It irritates me when I talk or move my tongue. Having one sore is OK. But having two sores in mouth … I don’t like to talk and lose appetite.
The cause of cancer sore is unknown. According the article below, current theories point to canker sores being the result of a localized autoimmune disorder. It is thought that the body’s own immune cells attack the cells lining the inside of the mouth.

Green tea surprisingly works to my sore well. Some chemicals in green tea control inflammation and has sterilization effect. I still get canker sore occasionally, but it is gone while it is small and not irritating.
